ABSTRACT

Pork, meat that comes from hogs or domesticated swine, and pork products are commonly consumed worldwide. Pork is sometimes referred to as ‘the other white meat’, a slogan once used by the National Pork Board, but is a red meat because of its myoglobin content (United States Department of Agriculture (USDA), 2013). The most popular cuts of pork available for retail purchase are from the shoulder, loin and side of the animal (National Pork Board, 2013). The National Pork Board reports the consumption of bacon, ham, sausage, pork chops, roasts (loin and tenderloin) and ribs most frequently based on an internal segmentation study conducted in March 2015.
