ABSTRACT

This chapter review the methods commonly used to identify seafood products mainly based on DNA techniques. Perspectives on development of quick DNA-based methods and of specific methods for identification of fish groups like tuna will be also addressed. It will give a focus on the different initiatives aiming to standardize and harmonize seafood identification methods for control laboratories.

Finally, with regard to the requirements of the European legislation on traceability of seafood products, a review on the development of methods to identify fishing areas will be done.
