ABSTRACT

Nanotechnologies and nano-biotechnologies will impact many aspects of our lives in the following years. The food industry will also be impacted and especially in the field of authentication and traceability. Biocaptors and microfluidics are part of this evolution. These technologies will allow the development of nanotags and nano barcodes that will be included to food packaging in order to add traceability and authentication functions. In addition to nano barcordes, biological markers will also be part of the developments to mark the food itself. This chapter describes several technologies in development these days in the field of authentication and traceability for food industry.
