ABSTRACT

Due to the high economic value of wine and the fact that it could get adulterated easily, a few chemical markers were already available to assess its traceability and confirm its authenticity. However, as the art of wine fraudulence grew more and more sophisticated, there was necessity and emergence of several newer makers. In the present time, continuous upgradation of analytical techniques for detection of traditional markers and investigation and exploration for non-conventional markers has become highly desirable for consumers, producers and regulatory bodies. This chapter discusses the latest scientific literature on the state-of-art ‘barcodes’ or markers that have currently emerged. It also investigates the suitability of different classes of new markers viz., elemental, isotopic, polyphenolic, DNA, peptide and metabolomic markers, for commercial application including the recently developed database, WinMet.
