An overview of the challenges facing the food processing and packaging specialists of the twenty-first century will be given. Commercially emerging thermal and nonthermal processing methods will be discussed relative to public health and product quality considerations. Visions for tomorrow’s processing and packaging environments are presented with special attention given to increased capabilities leading to increased system accountability and continuous validation.
