The purpose of this chapter is to introduce the reader to aspects of emulsion systems and to their use as vehicles for the delivery of nutraceutical lipids. The areas discussed include an overview of emulsion properties (Section 17.2), emulsion stabilization (Section 17.3), and characterization of emulsion droplet sizes (Section 17.4). The final section (Section 17.5) is devoted to the applications of emulsions as delivery systems for nutraceutical lipids.
