The fungal metabolites called aflatoxins are among the most potent naturally occurring carcinogens and are produced primarily by
Aspergillus
spp. fungi.
Its production in corn (
Zea mays
L.) can be dramatically influenced by several environmental factors,
some of which are beyond the control of producers: rainfall, ambient temperatures, humidity, and soil type.
