ABSTRACT
Awareness of the potential role of diet in the prevention and management of chronic and degenerative disease has led to a demand for high quality, safe, and effective healthy and benefi cial food and food-based products. This growing demand has resulted in the formation and development of the nutraceutical and functional food industries. As with the development of any new industry, this creates the need for a greater knowledge base and associated methods and technology development.
