Phytochemicals are broadly dened as compounds produced by plants and include the phenols, terpenes, and organosulfurs. Many of these chemicals have pigment, odorant, and/or irritant properties that may help the plant’s biochemical defenses against metabolic byproducts [e.g., reactive oxygen species (ROS), protein misfolding] and environmental insults (e.g., pathogens, insects, ultraviolet radiation).
