ABSTRACT

I. INTRODUCTION Cassava, sweet potato, carrot, beet, radish, taro, yam, celeriac, parsnip, and salsify are some of the important root vegetables grown in many parts of the world. Most root crops are hardy to frost. Radish and turnip are susceptible to heat injury. They are grown for markets as well as for domestic consumption but have relatively less market demand. Cassava, sweet potato, and carrots are grown extensively worldwide. For information on these root vegetables, see Chapters 3-5. Information on turnip, horseradish, and rutabaga is presented in Chapters 12-15. In this chapter, an attempt is made to briefly summarize information on beet, radish, taro, yam, and other vegetables, such as amorphophallus, celeriac, parsnip, and salsify.
