ABSTRACT
Cooking extruders were first introduced to the food and feed processing industry in the late 1950s. Since that time, these systems have grown in popularity, efficiency, and flexibility. From the beginning, preconditioning with steam and water has been an important part of the extrusion process. It continues to be so today regardless of whether the preconditioner is associated with a single-screw or twin- screw extruder.
