ABSTRACT

The history of human life begins with milk and the use of milk from animals has contributed to a complete life. This use of milk has been demonstrated to have a long history in societies throughout the world. Fermented milks have been recognized to be healthy foods since ancient times but fermented milks using intestinal bacteria such as Bifi dobacterium and Lactic acid bacteria (LAB) are even more valuable from the standpoint of maintaining health and have now come to be recognized as an important preventive medicine.
