Introduction Alternative sweeteners to sucrose continue to be of great interest to the food industry, health professionals, consumers, and the media. ey may assist the industry in reducing the calorie content of good-tasting foods and beverages, which is also of interest to health professionals. Perhaps one reason for media and consumer interest in alternative sweeteners is that their role is more easily understood than that of, for example, antioxidants. is understanding has led to controversy, which will be discussed in later chapters.
