Introduction Clauss and Jensen in 1967 incidentally discovered a sweet-tasting compound, 5,6-dimethyl-1,2,3oxathiazin-4(3H)-one 2,2-dioxide, which had a new ring system that had not been previously synthesized (Clauss and Jensen 1973). Systematic research on dihydrooxathiazinone dioxides revealed many sweet-tasting compounds. Variations of substitutions in positions five and six of the ring system noticeably influenced the intensity and purity of the sweetness. All synthesized substances exhibited some sweetness, even those without substitutions on the ring system. e maximum sweetness was found in compounds with short-chain alkyl groups.
