ABSTRACT

Introduction Advantame is a new ultrahigh potency sweetener and flavor enhancer developed by Ajinomoto. It is derived from aspartame, a dipeptide sweetener composed of aspartic acid and phenylalanine, and vanillin. Advantame is approximately 20,000 times sweeter than sugar and 100 times sweeter than aspartame. Advantame provides zero calories and has a clean, sweet, sugar-like taste with no undesirable taste characteristics. It is functional in a wide array of beverages and foods and is most suitable for use in blends with other high-potency or carbohydrate sweeteners. Advantame is stable under dry conditions.
