ABSTRACT

The information has been collated from public documents (legal, regulatory, and training) provided on the website of Food Safety Inspection Service (FSIS) of the United States Department of Agriculture (USDA) at https://www.fsis.usda.gov/. It is intended for use by meat and poultry establishments in considering decisions about design and construction of their facilities, as well as the selection of equipment to be used in their operations. The material is drawn principally from technical knowledge and experiences used by the FSIS in its regulatory role about the acceptability of facilities and equipment. An acceptable design is aimed at one major goal, that is, the production of a wholesome product for public consumption.
