ABSTRACT

Anise (Pimpinella anisum L.) is a member of the Umbelliferae or Apiaceae. Other names for this species are anis or aniseed. It is a dainty, white-‘owered annual plant with feather-like leaves. The part used are the fruits or seeds. The fruits yield after distillation 2.5-3.5% oil. trans-Anethole or (further in this text) anethole is the principal constituent, present to about 90% in the oil.
