With cellulose, hemicelluloses, glycoproteins, and lignin, pectins form the cell walls of all higher plants. ´e concentration of pectin is highest in the middle lamella, which is a tissue that connects cells. In plant physiology, pectin takes part in water retention and ion transport and, therefore, is involved in the growth, size, and shape of cells. Pectin content is less concentrated in primary cell walls and almost absent in secondary cell walls [2].
