Analysis of “kyo-Gashi” Techniques and Skills for Japanese Sweets Experts

Japanese sweets called “Kyo-gashi” are made in Kyoto city, and it has long history. It is important to preserve the skill for making the sweets. In this paper we describe the finger motion during the making process, and particularly the stability of the finger motion of expert. Quanta time analysis was conducted in this paper, and the non-expert can learn the expert skill.
