ABSTRACT

Food and in particular rice represents the most substantial exposure for geogenic arsenic for most citizens in the European Union. There is considerable variability in the arsenic content of rice, the percentage of arsenic occurring as inorganic arsenic and in rates of consumption, but evidence of significant human exposure through rice has already been found in Europe (Cascio et al., 2011) as it has been more recently in the USA (Gilbert-Diamond et al., 2011).
