ABSTRACT

Starch is the most dominant storage polysaccharide in plants and is widely distributed, being present in all major organs of most higher plants and practically every type of tissue: leaves, pollen, grains, fruit, roots, shoots and stems. In storage tissues such as endosperm or tuber, starch can be 65-90% of the dry weight of the tissue. The starch is organized in granules and its size and shape varies with the species, organ and the stage of development.
