ABSTRACT

A vitamin is an organic compound occurring naturally in small amounts in food, and is essential at low levels for normal human metabolic and physiological functions [1-3]. Vitamins cannot be synthesized in vivo in sufcient amounts to meet physiological requirements. The absence of a vitamin from the diet generally results in a specic deciency disease that can be reversed by its administration. The watersoluble vitamins all exhibit some degree of solubility in water, but differ in biochemical and physiological functions, and physiochemical properties.
