ABSTRACT

Aseptic processing is an area of food processing wherein the processing and packaging are mutually dependent. A failure in any one area will result in food spoilage. Unlike most other food processing operations, the processing equipment in the system are interdependent and must be presterilized prior to processing the product. The equipment used in aseptic processing systems must ful…ll the same sanitary and regulatory requirements as those used in conventional food processing, in addition to those necessary for sterilization and maintenance of a sterile state during processing.
