ABSTRACT

Besides antioxidant vitamins and pigments, peppers also contain dietary fi ber and several minerals essential to humans. They are a great source of iron, magnesium, manganese, phosphorus, copper and potassium. On the other hand, peppers contain low levels of cholesterol and sodium. Information regarding nutrient compositions of different peppers is provided by the Chile Pepper Institute (www.chilepepperinstitute.org) and the USDA Nutrient Data Laboratory (www.usda.gov).
