ABSTRACT

The technological advancement in the „eld of agriculture has led to the availability of large quantities of surplus agricultural produce and residues. Agro-processing involves aset of techno-economic activities carried out for preservation, handling, and value addition of agricultural produce, which encompasses all the operations from the stage of harvest till the material is transformed in desirable form for use by the consumers (Kachru, 2006). The net impact of all these activities is the rapid growth of food processing industries preparing both the primary and secondary processed products.
