ABSTRACT

ABSTRACT: In this study, acid hydrolysis and ethanol precipitation method was applied for pectin extraction from navel orange peel. The effects of solid-liquid ratio, extraction temperature, extraction time and extraction pH on the extraction yield of pectin were investigated. After singlefactor experiment, four factor three level orthogonal experiment was carried out to optimize the extraction parameters and the optimal extraction conditions were determined (solid-liquid ratio 1:15, extraction temperature 80◦C, extraction time 90 min, extraction pH 1.5) with the maximum pectin yield of 26.8%, which was confirmed through validation experiments.
