ABSTRACT

ABSTRACT: This paper focuses on shelf-life prediction of razor clams in frozen storage by water activity method. The changes of texture, pH, conductivity, water activity and TVB-N of razor clams stored at −5◦C, −20◦C and −40◦C along with storage time were measured. According to their correlation, water activity was chosen as the optimal indicator, the reaction activation energy Ea was 53.53 kJ/mol, pre-exponential factor k0 was 215.64 and water activity up to 0.20 was the shelf-life end. Based on the experimental results, the predicted shelf-life values were close to the real measured values. This experiment results showed that water activity could be used to predict the shelf-life of razor clams accurately.
