ABSTRACT

As discussed in other chapters, food safety is the prevention of any type of accidental food contamination. Food defense is taking it a step farther and involves the prevention of intentional food contamination. Over the years the food industry and regulators have been reminded of these kinds of occurrences, such as when the cyanide tainted Tylenol capsules in 1982 were intentionally tampered with by a deranged individual and the pesticide laced hamburger was contaminated by a disgruntled employee in 2003, it is important to remember the risk is always there.
