ABSTRACT

In recent years, the concept that food is not only required for energy and nutrition supply but also to provide health, prevent diseases, and maintain physical and mental well-being has been introduced to consumers. As a consequence, the demand for functional foods has increased in the last few decades. One class of functional food that has received special attention are the soluble bers, which include carbohydrates such as fructose-based polymers (fructans) and its oligomers (DP 2-10) named fructo-oligosaccharides (FOS).
