ABSTRACT
Alkaline-fermented foods (AFFs) are less known and studied than alcohol fermentation and acid fermentation even though they are widely consumed in various regions of the world. ese foods have been good diet sources for many people who have diculty in accessing to enough food and proper storage facilities.
