ABSTRACT

The food unhealthiness due to food deterioration during storage has been a health problem for humans since the dawn of history. While governments around the world are doing their best to improve the safety of the food supply, the existence of food-borne diseases (FBDs) remains a signicant health problem in all countries, from the most to the least developed ones. According to the World Health Organization (WHO), FBDs remain responsible for high levels of mortality in the general population, which points out the necessity of developing and applying food preservation techniques.
