Alternative Drying Processes for Probiotics and Starter Cultures

Both starter cultures and probiotics are mainly produced by highly specialized suppliers and distributed world-wide. As in case of powder the distribution is much easier and the transportation costs are much cheaper (see chapter 11), so the trend goes towards dried cultures. Especially probiotics are preferably dispensed in dry form especially for pharmaceutical applications.
