ABSTRACT

Glutathione (GSH) (l-γ-glutamyl-cysteinyl-glycine or (2S)-2-amino-4-{[(1R)-1-[(carboxymethyl)-carbamoyl]-2-sulfanylethyl]-carbamoyl}butanoic acid) is a tripeptide composed of glycine, l-cysteine, and l-glutamate. This substance belongs to an important group of low-molecular-mass thiols that play unique roles in biological systems, food, pharmaceutical, and aroma industries. Structurally, its molecule contains an unusual peptide linkage between the carboxyl group of the glutamate side-chain and the amine group of l-cysteine.
