ABSTRACT

The use of colorants as additives for different purposes and in different elds has been reported throughout the human history. The use of colorants in drugs, cosmetics, and foods by ancient Egyptians is well documented. Archaeologists have evidence that Egyptian women used green ore of copper as an eye shadow as early as 5000 BC and paintings in Egyptian tombs dating from 1500 BC depict the making of colored candy [1]. Colored spices have been used as culinary condiments contributing to the appearance, taste, and avor of food for centuries around the world.
