ABSTRACT

This introduction presents an overview of the key concepts discussed in the subsequent chapters of this book. The book describes the physical aspects of food and energy, thereafter delineating the impact of the industrialized food system on biodiversity and the planetary boundaries. It explains the intricate processes of “the biodiversity below people's feet” as well as the state of people's soils. The book focuses on attention on the rise and overall impact of disposable plastics—much of which is used to consume food and beverages. It identifies excellent resources and the importance of working towards solutions. The book demonstrates how the global food system and biodiversity interface with commonly consumed foods and beverages: Bananas, cacao, coffee, sugar, palm oil, tea, and avocados. It explains how centenarians of differing cultures and geographic locations share the common denominator of predominantly consuming whole plant foods.
