ABSTRACT

Cooking can become healthier when using whole food-based ingredients. Use of whole foods requires certain techniques that help to maintain and build flavor and approaches that help with time efficiency in the kitchen. This chapter provides information on use of these specific techniques as well as chef-based tips for efficiency in the kitchen. In addition, the chapter provides information on limiting excess sodium and processed sugars in recipes. At the end of the chapter are vegetable-rich, enjoyable, and flavorful recipes using the cooking techniques discussed.
