50Extensive research has been put into novel techniques, such as “modified atmosphere packaging” (MAP) and “active packaging” in order to fulfill the specific needs of metabolically active products. These efforts were dedicated to developing new food packaging systems on the one hand, and to prove their effectiveness in maintaining product quality on the other hand. This chapter presents an overview of active packaging systems for fresh fruit and vegetables, with a special focus on their effect on product quality and shelf-life. Scientific studies on the storage of fresh produce in active packages are collected and reviewed.
