ABSTRACT

There are many factors that are involved in the selection and testing of preservatives for use in product formulation. These factors can range as follows: determination of whether a certain preservative can be used in a product formulation for particular country or geographic region, formulation factors such as pH, water activity, and preservative solubility, antimicrobial activity of preservatives, effects of raw ingredients on preservatives, processing conditions, packaging effects, and microbiological testing.
