ABSTRACT

The protection of public health is the main reason for carrying out food safety and food hygiene work. This simple principle is often forgotten in the technical complexities of running a food factory, carrying out a hygiene audit or investigating a complaint. The sheer size and complexity of the task of feeding the country means that food is often relegated to yet another commodity to be made, distributed and sold. Unless the impact of food poisoning is remembered, food is just another product on shop shelves.
