ABSTRACT

Korea's agriculture and flora are similar to nearby areas of China and Japan, but its foodways are distinct. 1 Since the division of Korea at the end of the Second World War, North and South Korea (the Republic of Korea) have developed very differently. South Korea, the focus of this chapter, through its industrialisation and trade-based economy, has become one of the four Asian tigers. This Korean tiger is a meat eater with a diet greatly influenced by globalisation, but it remains very interested in the foods of Korean fields and forests.
