ABSTRACT

University professors are accountable for a multitude of respon­ sibilities. Depending upon the college or university, the extent of these responsibilities may vary considerably. Generally, the student population believes that teaching is a professor 's primary responsi­ bility. And teaching is certainly an all-important activity that has profound consequences. In academe, however, universities often place more emphasis upon research. This is particularly true of "research institutions," where many hospitality programs are found. Together, teaching and research account for the bulk of most profes­ sors ' job responsibilities. In addition to teaching and research, how­ ever, there is the often overlooked area of service, which is the focus of this chapter. Of these three areas, the latter seems to receive the least attention while also seeming to be the most ambiguous. In particular, service can demand a large amount of time and effort while it rarely results in the same level of recognition or reward for the individual as do teaching and research. These are among the many issues surrounding service.
