ABSTRACT

The coumarin constituent licocoumarone is a potent antioxidant and quenches active oxygen (Demizu et al., 1988). Antioxidant activity from Glycyrrhiza glabra var. glandulifera against the oxidation of lard at 100ºC was largely attributed to the flavonoids, licochalcones A and B, which were comparable in potency to vitamin E (Okada et al., 1989).
