ABSTRACT

Sharing food, along with music, lies at the heart of the ethnomusicologist’s field experience. However, many cultural and religious groups, together with a growing number of individuals, observe certain restrictions in their diets. To make sharing the food in this book as easy as possible, this list is intended to let you know which recipes are appropriate for vegetarian, vegan, and kosher diets. The key below tells you immediately what you can use and what you cannot; in some instances it may be necessary to make a small substitution (e.g., margarine for butter). If you are keeping kosher, please note that preprepared ingredients should be checked for a hechsher (kosher mark). Some recipes have multiple indications, such as K/VG for kosher/vegan. Any dish followed by a question mark means that it contains a prepared sauce or ingredient that may or may not contain meat or be kosher.
