ABSTRACT

Artificial intelligence (AI) is providing a multitude of competencies to machines which were long thought to belong exclusively to humans. The first person to use the term AI was John McCarthy in 1956 during the first academic conference on this topic: the Dartmouth Conference. Predicting the future behavior of customers is crucial in shaping marketing strategies, anticipating sale trends, and better managing the supply chain. Indeed, the efficiency of the supply chain is crucial for the success of a company, and the key strategy to achieve a competitive advantage is creating the perfect combination of demand prediction and inventory replenishment strategies. Indeed, food supply chains are often multi-sided, with different stakeholders covering different activities, objectives, and priorities. The transformation of the agri-food sector in the light of the spread of AI is undeniable. Stephen Hawking said that AI could be the biggest event in the history of civilization.
