ABSTRACT

Food, cuisine and food traditions all have their roots in local agriculture and are among the most fundamental elements of culture. Enhancing linkages between agriculture and tourism along the value chain presents genuine opportunities for stimulating local agriculture, artisanal food production, and local artists, retaining tourism earnings, and improving the distribution of economic benefits within the local community. This chapter considers the potential for agritourism to be used as a tool for sustainable community development within the context of the Thailand 4.0 development policy. Particular emphasis is placed on the relationship between agriculture, cuisine, local arts and tourism, and how these can be harnessed collectively as ‘creative agritourism’.
