ABSTRACT

This chapter aims to introduce a relevant training package for all levels of knowledge and skills requirement for capacity building on halal quality management. This capacity building is focused on the certification in food products/beverages/food supplement, food premise/hotel, consumer goods, cosmetics and personal care, slaughterhouse, pharmaceutical, as well as Halal logistics and supply chain. In this chapter, Halal logistics and supply chain training will also be discussed as it is vital for Halal value chain in any Halal-related activity to ensure Halal integrity status. Using several main standard references, namely the Malaysian Standard MS1500; 2009, MS1480, MS1514, Halal Food Manual Procedures, Halal Assurance Management System, JAKIM and Food Acts 1983 and Food Regulations 1985, MS2400 Halal Supply Chain, a training framework is suggested to assist food industries to achieve a consistent concept of halalan-toyyiban that leads to the certification success at a reasonable cost and time. This includes a combination of awareness programme introducing “Shariah” and Islamic principles on halal food, bridging programme relating “Shariah” to MS1500 for production, preparation, handling and storage of halal food, strengthening programme on its implementation through Halal Assurance Management System (HAS) and audit programme. The highest level includes certified executive-level training on HAS and auditing which enables the industry to establish halal file and HAS file preparation and adequate on-site preparation before submission through an online halal certification application. This chapter also provides future research recommendation with regard to Halal sector and training for Halal capacity building, especially in Halal logistics perspective
