ABSTRACT

This chapter introduces food literacy and offers suggestions on how to develop food literacy skills in adult learners. Based on the Critical Literacies Advancement Model (CLAM) for promoting positive social change, food literacy falls within the category of psychosocial and environmental literacies. Education, at all stages of life, is instrumental in developing knowledge and positive food-related behaviors in individuals. Many frameworks lack a viable solution for changing the many socioenvironmental factors that also greatly influence individuals’ behavior choices. However, changes in the larger sociopolitical structural and policy domains are needed to facilitate access to healthy and affordable food options for all citizens, thus indicating the need for developing food literacy.
