ABSTRACT

This chapter introduces each of the food types to enable people to develop an understanding of the characteristics of these foods and their structural, nutrient and non nutrient profiles. It explores the opportunities for human nutritional resilience in various geographical, climatic, cultural and urbanised settings through the consumption of a biodiverse diet in which highly nutritious foods feature. Mind mapping is a good way to brainstorm about a topic without worrying about structure. It allows people to construct a visualisation. It starts with the central concept and moves to ideas and then sub-ideas, all interlinked. Vegetables are defined as the edible part or parts of a plant and, as such, would cover all categories of plant foods, including fruits, legumes, seeds and nuts. Fruits provide dietary fibre and various vitamins, minerals and phytonutrients. Vegetables are an excellent source of dietary fibre and are usually a better source of vitamins and minerals than fruit.
