ABSTRACT

Food is defined as ‘anything which may be taken in the form of solid, semi-solid or liquid primarily to meet hunger’. Sources of food vary around the world. There is a close relationship between habitat and sources of food. Primitive men ate roots, fruits, fish and raw meat of the animals they hunted. Viewed socially, food preparation has traditionally been female occupation, requiring hours of repetitive effort. Over a period of time, it has gradually shifted out of the home as a profession and been made a male occupation. Green leafy vegetables are regularly included in the daily diet of the Vaiphei tribes. Before preparing any dish, Vaipheis usually select food items that can be mixed together while cooking. Amongst them, simple boiling is considered the most important part of cooking ingredients.
