ABSTRACT

All people around the globe interact with food every day. At the same time, the various aspects of food encompass a variety of science fields, making it an ideal vehicle for STEM learning. Food pedagogy represents a recent field, and many food education initiatives do not incorporate scientific concepts. Both food system and STEM learning often focus more on developing specific skills and memorizing facts rather than also examining broader social, economic, and environmental impacts related to both. This chapter provides a survey of food education initiatives for youth and families that also incorporate STEM learning. Specific examples related to growing, purchasing, and preparing food highlight the different ways to foster science literacy. The final section outlines the common characteristics of successful food and STEM education initiatives that allow for more authentic sustainable education programs.
